Chipotle Sweet Potato Fries with Honey Sriracha Aioli

Served with a sweet and spicy honey sriracha sauce, these crispy baked sweet potato fries are an easy snack, side dish, or appetizer that will steal your heart through your taste buds. Regular french fries and ketchup will never be the same again!

This simple recipe has just completely and utterly transformed the game for french fries. Thin strips of sweet potato are covered in a spicy chipotle seasoning, baked until crispy, then dunked into an ultra-creamy honey sriracha aioli. Separately, the fries and the sauce are both irresistible – but together, they’re out of this world! Here are a few more reasons to love them:

  • Super flavorful. The subtle sweetness of each fry mingles with the spicy, savory seasoning blend and the result is perfection.
  • Crispy and tender. The baking process requires a fraction of the oil that you’d need for deep-frying, but the fries still come out crisp on the exterior and soft and tender on the interior!
  • Quick and simple. It takes just 10 minutes to prep these fries for the oven, and then all you have to do is wait for them to be done.
  • The addictive sauce! The honey sriracha dipping sauce became my new obsession the moment it touched my tongue. It has just the right balance of sweet to heat, plus a lovely touch of tang to help tie it all together. I’m quite certain I could eat a whole jar of the stuff in one sitting – it’s that delicious!

For the Chipotle Sweet Potato Fries

  • Sweet potatoes – Slice these into 1/4-inch matchsticks. (See the section below for more info on how to do this!)
  • Olive oil – This makes the seasoning blend stick to the fries and helps them bake up nice and crispy.
  • Smoked paprika – To supplement the chipotle powder.
  • Chipotle chili powder – If you’re sensitive to spicy foods, you can leave this out in favor of the milder, smokier heat from the paprika (and the sauce’s added spiciness).
  • White ground pepper – Originating from the same plant that produces black pepper, this variety is slightly more spicy. You can use regular black pepper instead, if preferred.
  • Salt – Feel free to use table salt, kosher salt, sea salt, etc.

For the Honey Sriracha Aioli

  • Mayonnaise – This will be the super creamy base for the sauce.
  • Lemon juice – Freshly squeezed is the way to go!
  • Sriracha – Go with a milder or spicier variety depending on your personal tastes.
  • Honey – Raw honey is definitely my preference, as it’s less processed than regular honey.
  • Garlic Powder – For depth of flavor.

How to Cut a Sweet Potato

Not sure how to cut a sweet potato into matchsticks? The following method makes it super easy.

  • Rinse and dry the potato. Give your sweet potato a good rinse, then pat it dry with a paper towel.
  • Peel if desired. Use a potato peeler to remove the skin if you’d like.
  • Cut the potato in half. Lay the sweet potato on its side on top of your cutting board, positioning a flatter area on the bottom so it’s sturdy. Hold it firmly in one hand and use the other to carefully slice it in half with a sharp chef’s knife.
  • Slice the potato into strips. Place both halves of the sweet potato cut-side down and slice each half into 1/4-inch strips, lengthwise.
  • Form matchsticks. Finally, cut all of the strips into even 1/4-inch matchsticks. Repeat with the remaining potato.

How to Make Sweet Potato Fries with Honey Sriracha Aioli

Once both of your sweet potatoes are washed, dried, and cut into matchsticks, it’s time to get down to business. The oven does most of the work from here on out!

Make the Fries

  • Heat the oven. Preheat the oven to 450°F.
  • Season the fries. Add the sweet potatoes, olive oil, smoked paprika, chipotle chili powder, and white ground pepper to a large bowl. Mix it all together with your hands so that everything is coated with spice.
  • Bake. Place the seasoned sweet potato fries onto a baking sheet, spreading them out in a single layer. Bake the fries for 13-15 minutes, then pull them out of the oven, flip them, and bake them for an additional 10 minutes.
  • Add salt. Remove your baked fries from the oven and immediately season them to taste with salt.

Make the Sauce

  • Combine the ingredients. Add the mayo, lemon juice, sriracha, honey, and garlic powder to a small bowl. Mix everything together until the sauce is well combined.
  • Enjoy! Serve the aioli with your crispy chipotle sweet potato fries.

Tips for Success

Altogether, this standout side dish is done in about 30 minutes. Here are some simple ways to make sure the process goes smoothly:

  • Cut the potatoes cautiously. It’s important to take your time when you’re cutting the potatoes into matchsticks to avoid injuring yourself. Use a sharp knife to ensure that they don’t slip and never place your fingertips below the blade.
  • Evenly-sized matchsticks are key. I like to cut my potatoes into 1/4-inch matchsticks – thin enough to get them nice and crispy. However, the most important thing is that they’re all around the same size. Otherwise, some will cook faster than others.
  • Line the baking sheet to prevent sticking. If you have a nonstick baking sheet like I do, you can get away with not lining it since there’s oil on the fries. In any other case, it’s a good idea to place a sheet of parchment paper or a silicone baking mat between the pan and the fries.
  • Don’t forget to flip. Flipping over your fries about halfway through the baking process ensures crispiness all around. Once they’re done cooking, let them rest while you make the sauce to help them crisp up even more.

How to Store and Reheat Leftovers

If you have any extra fries, here’s how to save them for later:

  • To store. Let them cool all the way down to room temperature, then store them in an airtight container with a paper towel lining the bottom. The paper towel will soak up excess moisture to keep the fries from getting soggy. Leftover fries will stay fresh in the fridge for about 4 days. Leftover aioli should be refrigerated in an airtight jar or container. It will last for up to 1 week!
  • To reheat. Place the fries onto a parchment-lined baking sheet and spray them lightly with cooking spray. Warm them in a 400°F oven for about 5 minutes, or until they’re nice and hot.

Can I Freeze Baked Sweet Potato Fries?

While the honey sriracha sauce is not freezer-friendly, you do have the option of freezing your fries. First, spread them out on a baking sheet and flash-freeze them for 1 hour. Once the fries are frozen solid, move them to a freezer bag or an airtight container and store them for 4-6 months.

I recommend reheating your sweet potato fries directly from the freezer rather than thawing them out beforehand. Follow the above directions, but skip the cooking spray and keep them in the oven for about 20 minutes instead of 5.

For the Sweet Potato Fries

  • 2 sweet potatoes, sliced into 1/4” matchsticks
  • 3 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon chipotle chili powder

  • salt to taste

For the Honey Sriracha Aioli

  • 1/3 cup mayo
  • 1 tablespoon lemon juice
  • 1 1/4 teaspoon sriracha
  • 1 teaspoon honey
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat oven to 450°F.
  2. In a large bowl, add sweet potatoes, olive oil, smoked paprika, chipotle chili powder, white ground pepper. Mix everything together with your hands so that everything is coated with spice.

  • To Reheat: Transfer fries to a parchment-lined baking sheet and spray them lightly with cooking spray. Place them in a 400°F oven for about 5 minutes, or until hot.
  • To Freeze: Spread cooled fries onto a baking sheet and flash-freeze for 1 hour, then freeze in an airtight container for 4-6 months. Reheat directly from frozen – place onto a lined baking sheet and bake at 400°F for about 20 minutes. Do not freeze aioli.
