For those of you who are new to JHE, Real Men Cook day is when I share recipes that are easy enough for your hubbie, boyfriend, or special someone to make. Now, I know that there are alot of men out there who are awesome cooks, but there are also alot of men out there in need of some help. Well, men, here ya go!:)

Is there anything easier than a Crock Pot recipe? I think not! All you have to do is throw the ingredients in and let the crock pot do the rest of the work. Gotta love that! There is nothing better than starting dinner in the morning and walking in the house after a long day of work to the amazing smell of Garlic Herb Chicken or Balsamic Braised Short Ribs in the crock pot

Last week I posted this amazing Chipotle Beef Barbacoa recipe! Well today, we are taking that amazing spicy, tender, beefy barbacoa and we are putting it on the naturally sweet and nutritious Sweet Potato. This recipe will hit all your key taste buds: sweet, salty, spicy, and down right delicious! {that is the small one in the back, in case you were wondering :)}

How to Make Chipotle Beef Barbacoa Stuffed Sweet Potatoes

To get started, make the Chipotle Beef Barbacoa. {this is a crock pot recipe so you will need to plan accordingly}

Wash 4 sweet potatoes, poke with a fork, and wrap them each in one paper towel.

Cook in microwave on high for  4-5 minutes for the first potato, 2-3 minutes for each additional potato.

Once potatoes are tender, cut in half and top with Beef Barbacoa.

    I am pretty sure my other half has no idea where to even find the crock pot and would ask me 48 questions about plugging it in. He is a lost kitchen cause. But he would totally eat this! Yum!

    1. hahaha… Well at least its not 50 questions! 🙂 Too funny! Maybe you will have to handle the meat portion of the dish since its super easy and then he can wrap the sweet potatoes with paper towels and put them in the microwave. 🙂 Hopefully pressing start isn’t that difficult for him. hehe… boys!!! 🙂 Can’t live with them can’t live without them!
