What You’ll Need

This avocado taste is simple but tasty! All you need is 4 basic ingredients for this healthy breakfast idea.

  • Whole grain toast – You can use other toast varieties as well, I just prefer whole grain to keep this breakfast as healthy as possible.
  • Avocado – The star of this breakfast! Look for perfectly ripe avocados that will be easy to mash.
  • Eggs – For making the soft-boiled eggs
  • Salt and pepper – Just a pinch of each for flavor.

How to Make Smashed Avocado Toast with Soft Boiled Eggs

There’s two parts to making this easy avocado toast with soft boiled eggs – making the perfect soft boiled eggs and assembling the avocado toast.

Make the Soft Boiled Eggs

  1. Boil the eggs. Bring a medium saucepan to a boil, then added the eggs using a slotted spoon. Cover and boil for 6 1/2 minutes.
  2. Add the eggs to an ice water bath. While the eggs are boiling, prepare an ice water bath. Immediately put them into the ice water and let sit for 3 minutes. Gently remove the shell, taking care not to break open the egg.

Assemble the Smashed Avocado Toast

  1. Smash the avocado. Mash up your ripe avocado with a fork or potato masher.
  2. Toast the bread. Toast your bread according to your personal preference.
  3. Assemble & serve. Place the toast on a plate, top with 1/3 cup of avocado and a soft boiled egg. Season with salt and pepper, then serve.

Tips for Success

If this is your first time making avocado toast with a soft boiled egg, keep these easy tips in mind:

  • Boil the eggs for the exact amount of time. 6 1/2 minutes is the exact amount of time for large eggs to be perfectly soft boiled.
  • Choose avocados on the ripe side. While it can be difficult to find an avocado at just the perfect level of ripeness, with this recipe it’s easier to use avocados a little on the soft side vs not yet ripe. The riper the avocado, the easier it will be to mash.
  • Add more flavor. Feel free to add additional seasonings on top of this toast. A few red pepper flakes would add a nice kick of heat.
  • Use a thick slice of bread. For the sturdiest avocado toast, look for a thick slice of bread that won’t flatten or turn soggy under the weight of the toppings. Whole grain is my go-to but sourdough is another great option.

Serving Suggestions

The most important part of this avocado toast is that it should be enjoyed immediately. None of the ingredients will last long at room temperature or even in a fridge.

This 4 ingredient avocado toast recipe is just the beginning – feel free to get creative and add toppings as you see fit. While I love it as-is with just the egg, I’ll often add in additional toppings. A few of my favorites are:

  • Tomato
  • Spinach
  • Bacon
  • Feta or another cheese
  • Sprouts
  • Olive oil and/or fresh lemon juice
  • Seeds

The great thing about avocado toast is that it’s versatile, you can easily making it using whatever you’re craving or already have on hand in the house. Even if it’s just a few ingredients, it’s guarantee to taste good.

Avocado Toast is Best Fresh!

Avocado toast should not be made in advance, especially when topped with the egg. This breakfast is best enjoyed fresh, while the toast and egg are still warm and the avocado has just been mashed.

If needed, you can reduce the amount of toast you make by reducing the amount of ingredients used, to avoid having leftovers.

Ingredients

Scale
  • 4 slices of whole grain toast
  • 4 avocado, mashed
  • 4 whole large eggs
  • salt & pepper

Instructions

Soft Boiled Egg:

  1. Fill a medium saucepan with water, bring to a boil.
  2. Add whole eggs to boiling water using a slotted spoon. Cover and boil for 6 1/2 minutes. (not a minute under or over)
  3. Prepare an ice water bath for the eggs. After the 6 1/2 minutes is up. Immediately put them into the ice water bath. Let sit fore 3 minutes. Gently remove the shell. Set aside.

Avocado Toast:

  1. Toast the bread.
  2. To assemble: place toast on a plate, top with 1/3 cup of avocado, 1 soft boiled egg and season with salt & pepper.
  3. Serve.
