Apple Cinnamon Crepes with Maple Mascarpone

An easy crepe recipe complemented with sweet Apple Cinnamon filling and finished off with a Maple Mascarpone Cheese topping. These Apple Cinnamon Crepes are a must have! 

Have you ever watched the show Chopped or Masterchef? If not, your missing out. The premise of the show is there are a number of chefs selected for a challenge. The challenge? To make a dish out of mystery ingredients hidden in a basket. I have always wanted to try this to test out my culinary chops. Well, guess what? I am finally getting my chance!

Myself and 10 other bloggers are starting a Mystery Dish Challenge once a month. How it works? Every month one of us 11 bloggers will choose the Mystery Dish ingredients. That host will give us a set number of ingredients to use and tell us how many of those ingredients we must incorporate into our dish. On the 29th of every month we will post the dishes we came up with using the Mystery ingredients.

This month, the host is Dani over at See Hubby Cook. The ingredients she chose were Bacon, Cheddar cheese, Maple syrup, Peanut butter, Cinnamon, and Apples. We had to use at least 2 of them, I choose to use Apples, Cinnamon, and Maple Syrup.

Enter the recipe! 🙂 My husband is a lover of crepes. He loves sweet, savory, and basically any crepe. I have actually never made crepes before, in fact I got the crepe batter recipe I’m using from my mother-in-law {tweaked it a little} because I didn’t have one. Let me tell you, I am going to be making crepes ALOT more often. This Apple Cinnamon Crepe with Maple Mascarpone Cheese topping was absolutely to die for! After I took the first bit I was in heaven! The crepes were really soft, light, and airy. Then there was a little crunch from the apple cinnamon topping and the bite was finished off with the creamy sweet maple mascarpone. Holy Yum! DE-LISH! I’m telling you, easiest thing ever and absolutely amazing. You seriously need to try them. I promise you with everything I have that they will deliver. Cannot wait to hear what you all think!

How to Make Apple Cinnamon Crepes with Maple Mascarpone

To get started, in a blender combine 1/2 cup of all-purpose flour, 1 Tablespoon of melted butter, 1/4 teaspoon of salt, 1/8 teaspoon of cinnamon, 2/3 cup of 2% milk, and 2 eggs.

Mix in a blender until flour just combined and batter is smooth {about 1 minute}. There should be no lumps. Place in refrigerator for 30 minutes to let the batter set.

Peel, core, and dice 2 granny smith apples. Set aside.

In a large saute pan, heated over medium high heat, add 1 Tablespoon of butter, apples, and 2 Tablespoons of brown sugar.

Saute for 2-3 minutes then add 1 teaspoon of cinnamon. Mix until combined and saute for another 2-3 minutes until apples are just starting to get tender.

Remove from heat and set aside. In a small bowl, combine 8 oz. of mascarpone cheese, 1 Tablespoon of Maple syrup, 1 Tablespoon of honey, and 1 teaspoon of vanilla. Gently mix to incorporate all ingredients.

Heat a large non-stick saute pan to medium high heat. Spray with cooking spray or rub with butter. Then, with pan on a tilt, pour 1/4 cup of crepe batter into the middle of the pan. Rotate to make sure crepe batter spreads across entire pan. Flip crepe using fingers or spatula after 2-3 minutes. {or the bottom is just slightly browned}

Cook the other side for another minute. Fold the crepe in half once, and then in half again. Place on plate.

Continue to do the same steps until all crepes are made.

Cinnamon Crepes:

  • 1/2 cup of all-purpose flour

Apple Cinnamon Topping:

  • 2 granny smith apples, peeled & diced
  • 1 tablespoon of butter,
  • 2 tablespoons of brown sugar
  • 1 teaspoon of cinnamon

Mascarpone Topping:

  • 8 oz. of mascarpone cheese
  • 1 tablespoon of maple syrup
  • 1 tablespoon of honey
  • 1 teaspoon of vanilla extract

Instructions
