Caprese Flatbread with Balsamic Reduction

Have you got on the Caprese bandwagon yet?  I don’t know about you, but whenever I go on Pinterest I feel like that is all I see.  Well, guess what.  Here’s another Caprese recipe for you to pin, and believe me, you will be glad you did!

This Caprese Flatbread has the perfect combination of fresh flavors from the basil, roasted tomato, and then topped off with a sweet Balsamic Reduction. All I can say is OH MY GOSH! Plus, it is super easy to make. I roasted the tomatoes in the afternoon because I knew I was going to be making it that night. Mike got home from work, we went to go look at land to purchase and came back. I assembled the flatbreads in like 5 minutes and 10 minutes later we had absolute deliciousness waiting for us. The only thing that would have made this meal even better would have been a glass of Malbec wine. Anyway, I hope you all enjoy this unique flatbread as much as we did. To get started, preheat oven to 400º. Place 1 pint of grape tomatoes on a baking sheet and top with 2 Tablespoons of olive oil and salt.

Place in oven and roast tomatoes for 20 minutes.

Reduce oven temperature to 350º. Place 2 whole wheat naan flatbreads on a baking sheet. Top each flatbread with 1 Tablespoon of olive oil and 1/2 teaspoon of minced garlic, spread evenly.

Top each flatbread with 4 oz. of freshly sliced mozzarella.

Next, evenly distribute the roasted grape tomatoes on top of each flatbread.

Place flatbreads in oven and bake for 10 minutes or until cheese is melted.

Top each flatbread with 1 1/2 Tablespoons of fresh chopped basil. {will need a total of 3 T. of basil}

Description

Caprese Flatbreads are loaded with fresh basil, juicy roasted tomato, gooey mozzarella cheese, and a sweet and tangy balsamic reduction.


Ingredients

For the Roasted Tomatoes:

  • 1 pint of grape tomatoes
  • 2 tablespoons of olive oil
  • salt

For the Pizzas:

  • 2 pieces of stonefire artisian flatbread or naan bread
  • 4 garlic cloves, minced
  • 3 tablespoons of olive oil
  • 8 oz. of fresh mozzarella cheese, sliced
  • 1/4 cup of basil, roughly chopped
  • Balsamic Reduction

Instructions

Roast Tomatoes:

  1. Preheat oven to 400ºF.
  2. Place tomatoes on a baking sheet and top with olive oil and salt.
  3. Bake for 20 minutes until tomatoes are roasted and burst.

Caprese Flatbreads:

  1. Reduce oven temperature to 350ºF.
  2. Place flatbreads on a baking sheet. Top each flatbread with olive oil. Evenly divide the minced garlic between the two pizzas.
  3. Top each flatbread with 4 oz. of freshly sliced mozzarella.
  4. Evenly distribute the roasted grape tomatoes on top of each flatbread.
  5. Place flatbreads in oven and bake for 10 minutes or until cheese is melted.
  6. Top each flatbread with fresh basil and drizzle with balsamic reduction.
