Caprese Flatbread with a Balsamic Reduction

Have you got on the Caprese bandwagon yet?  I don’t know about you, but whenever I go on Pinterest I feel like that is all I see.  Well, guess what.  Here’s another Caprese recipe for you to pin, and believe me, you will be glad you did!

This Caprese Flatbread has the perfect combination of fresh flavors from the basil, roasted tomato, and then topped off with a sweet Balsamic Reduction. All I can say is OH MY GOSH! Plus, it is super easy to make. I roasted the tomatoes in the afternoon because I knew I was going to be making it that night. Mike got home from work, we went to go look at land to purchase and came back. I assembled the flatbreads in like 5 minutes and 10 minutes later we had absolute deliciousness waiting for us. The only thing that would have made this meal even better would have been a glass of Malbec wine. Anyway, I hope you all enjoy this unique flatbread as much as we did. Be sure to get the delicious Balsamic Reduction recipe I posted earlier this week, its what MAKES this dish!

To get started, preheat oven to 400º. Place 1 pint of grape tomatoes on a baking sheet and top with 2 Tablespoons of olive oil and salt.

Place in oven and roast tomatoes for 20 minutes.

Caprese Flatbread 2Reduce oven temperature to 350º. Place 2 whole wheat naan flatbreads on a baking sheet. Top each flatbread with 1 Tablespoon of olive oil and 1/2 teaspoon of minced garlic, spread evenly.

Caprese Flatbread 3Top each flatbread with 4 oz. of freshly sliced mozzarella.

Next, evenly distribute the roasted grape tomatoes on top of each flatbread.

Place flatbreads in oven and bake for 10 minutes or until cheese is melted.

Caprese Flatbread 6Top each flatbread with 1 1/2 Tablespoons of fresh chopped basil. {will need a total of 3 T. of basil}

Lastly, drizzle a Balsamic Reduction over the top to finish it off! {here’s my easy Balsamic Reduction recipe}

Serves: 2 pizzas
Ingredients
Roasting Tomatoes
  • 1 pint of grape tomatoes
  • 2 T. of olive oil
  • salt
Pizza Ingredients:
  • 2 pieces of whole wheat naan bread
  • 1 teaspoon of minced garlic {approximately 1 garlic clove}
  • 2 T. of olive oil
  • 8 oz. of fresh mozzarella cheese, sliced
  • 3 T. of basil, roughly chopped
  • Balsamic Reduction

Krista,
I saw this via Pinterest link and liking all things Caprese just had to try it.
It came out perfect, tasted wonderful and introduced us to Balsamic Reduction which really made the tastes POP. My wife raved about it too so I have that going for me too.

Looking over your other recipes now that I know you are awesome.
